Peach Habenero Chicken w/ rice

1 whole chicken
1 pack crimini mushrooms (wash or not, according to your personal beliefs)
4 cloves garlic (or more)
4-5 medium peaches fresh, chopped
~ one half habenero pepper (see notes below)
1 hungarian pepper
olive oil, salt, black pepper

rinse whole chicken, set aside. rinse mushrooms or brush clean.
carefully remove seeds from peppers. recommend doing this under running water to keep it from splashing at you by accident. habeneros are one of the hottest peppers, you don't want this in your eyes!!!
roast the peppers until charred by putting in an empty pot with a lid for about 10 minutes. You want them to burn a little! you will chop these and use them. only use as much of the peppers as you can take!
chop the peaches and garlic. add the peaches and garlic to the peppers. cook over medium heat till hot.
add whole chicken, and mushrooms. you can use frozen rice or make rice separately. add the rice after after about 2o minutes.
cook until chicken reaches 165.
salt. pepper.
eat! enjoy! share!!!

vegetarian option:
make up peach and pepper sauce as specified above. stir fry mushrooms with bell peppers. Add firm chopped tofu to stir fry, till hot.
serve stir fry over couscous or rice, and peach and pepper sauce on top. YUM!!!
